Cupcakes – a fabulous recipe…

I like to bake to relax (and my husband likes to relax by eating what I bake – everyone’s happy!) and so, when I discovered a foolproof cupcake recipe and one for the best frostings I have ever tasted, I just had to share.
Head over to Cupcake Style and get your pinny out… Stay traditional and bake the yummy vanilla ones or make apple & raspberry cupcakes and convince yourself that covers off 2 of your 5 a day!
A tip that has revolutionised my cupcake baking is to use your piping bag to evenly distribute the cake mix into the cases, thus ensuring a lovely level top to ice – you’ll have to work hard to convince people you made them yourself.
Start practising now and who knows, you may decide that a ‘Big Wedding Bake-Off’ is the ideal way to produce home-made favours. Just make sure you give yourself enough time to enjoy the process rather than finding yourself drowning in buttercream when you should be relaxing with a glass of champagne.
